Just came back from Hawai'i, and they LOVE their spam over there. It goes really good with a fried egg and macaroni salad and white rice.
 
My husband's family makes something they call "Bohnsalade" (bean salad) with white kidney beans, chopped onion, cubed luncheon meat (we ususally use something cheaper than real SPAM called Holiday), oil and vinegar... Aside from demanding he switch from regular onions (which I don't like raw) to Vidalias or sweet red onions, it's surprisingly tasty.

Cheaper than real SPAM? That is a frightening proposition. You don't eat scrapple, do you?

Spam is high end canned mystery meat! The cheaper one we always saw was Treet. There are a bunch of generic store brands ones too.

BTW, have you had the BACON SPAM? It's SPAM! With real bacon fat!

Bacon spam might be worth trying. There is little in this world that is not made better by bacon fat. Or duck fat. Or avocado. Mmmm, fat.

Akueck, my husband is often heard to say that bacon fat is one of the tastiest substances on Earth... but I'll go with you and agree on the duck fat too.

Mmmm, bacon... I should go make bacon :) Where's my cast-iron pan...
 
Cast-iron pans... the best way to make bacon. And then to use the bacon fat to cook up your eggs. No butter needed.

I love my cast-iron pan. And my cast-iron dutch oven. I use it to make traditional Irish soda bread. Well, sorta traditional.



I don't have an open fire.
 
Hee hee, I keep a ramekin of bacon fat on my stovetop for my morning egg... I occasionally get the really cheap fatty bacon just so I can refill the bacon fat dish :)

The fat's draining out of the bacon now, then it's time for eggs... Mmmm, bacon egg and cheese sandwich... if I have some lettuce, I'll even add a little mayo...
 
I just looked scrapple up on wikipedia. I'd eat it. It's like hotdogs, something edible made from stuff that would otherwise be wasted. I hate wasting food. And bacon scrapple would be tasty.
 
Scrapple cooked perfectly where the outside is crunchy and the inside is still soft, is a culinary delight. Scrapple, egg, and cheese sandwiches are one of my all time favorite foods.
 
I feel I would be more inclined to eat scrapple if it had a more appetizing name. "Scraps" is just not fun-sounding.
