So I made my first batch ever of wine. It's a Pomegranate wine. It taste really nice. But it does need a little help. It's too singular,, monolithic,,, I don't know what the word is. I would like to add some layers. A bit of a spicy finish would be ok. Like a Cab, but just a slight taste of that tannic, spicy, pepperish finish. A little bit a acidic might be good as well. The only thing I have done so far is oaked it.

Suggestions any one? It's smooth and taste like Pomegranate with some oak. Duh!
 
If you get yourself a bag of tannic acid powder you can experiment with that. Also adding some strong black tea might help.

The tannic acid is available on Amazon or any online brew shop or if you're lucky to have a LHBS then I bet they would have it as well.

Tea is everywhere! Some English Breakfast steeped long and hot to leach out the tannin. Won't be a particularly good cup of tea but it will add an interesting dimension to the wine.

If you want to be more peppery (like a cabsauv. Frank. Blend) you could literally add a few peppercorns in a mesh bag for a few weeks, I did this to a blackberry mel to mimic a Merlot cab frank blend. A little star anise could do wonders too.
