So I made my first batch ever of wine. It's a Pomegranate wine. It taste really nice. But it does need a little help. It's too singular,, monolithic,,, I don't know what the word is. I would like to add some layers. A bit of a spicy finish would be ok. Like a Cab, but just a slight taste of that tannic, spicy, pepperish finish. A little bit a acidic might be good as well. The only thing I have done so far is oaked it.
Suggestions any one? It's smooth and taste like Pomegranate with some oak. Duh!
